Few years ago, I was able to buy a Banana Cake somewhere in Laguna during our company field trip. We stop over to a very small bakery and check the available bread display. I got curious to see what is inside the display glass with chocolate toppings. It was a very small chocolate bits which makes it more appealing to me. Without anymore question, I bought that bread.

And so, we continue our travel to our destination and while we were on the road, we started opening what we bought from the store and shared it with the other. To our surprise, we begun discussing what was this bread is and I could not wait to come back because I feel like I want to buy some more so we have something to eat while we were on the venue. 

Few days after, we decided to stop over on the same bread shop, but unfortunately, the bread I am looking for is no longer available and the bread-maker only cooked few pieces to let the consumers visit them regularly. It was their strategy to cook small number of bread para hindi magsawa ang mga tao and babalik-balikan nila ang maliit na bakery.

I can say that this is the Best ever Banana Cake I have ever tasted. Banana Cake is good for breakfast, or afternoon or even merenda or snack time. Banana Cake is mostly appreciated when coupled with coffee or even soda, but I preferred coffee and dig in.

Banana is the main recipe of Banana Cake and is known for having a very good Potassium contents. Banana is rich in Potassium contents which makes your bone and muscle stronger and free from any rheumatism or arthritis family. A moisture pack banana bread or cake that is loaded with banana, tangy-sweet raisins, chocolate bits or toasted walnuts makes it more delicious.

The usual recipe and ingredients of making Banana bread is of course Ripe Banana, Flour, Sugar, salt, Baking soda or powder, butter, vanilla extract for extra aroma, and eggs.

Banana Cake

3 large ripe bananas (about 1 and 1/2 cups mashed)

3 cups (375g) all-purpose flour (spoon & leveled)

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

3/4 cup (170g) unsalted butter, softened to room temperature

1 cup (200g) granulated sugar

1/2 cup (100g) packed light or dark brown sugar

3 large eggs, at room temperature

2 teaspoons pure vanilla extract

1 and 1/2 cups (360ml) buttermilk, at room temperature*

Cream Cheese Frosting

8 ounces (224g) full-fat block cream cheese, softened to room temperature

1/2 cup (115g) unsalted butter, softened to room temperature

3 cups (360g) confectioners' sugar, plus an extra 1/4 cup if needed

1 teaspoon pure vanilla extract

1/8 teaspoon salt

Instructions

Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan.

Make the cake: Mash the bananas. I usually just use my mixer for this! Set mashed bananas aside.

Whisk the flour, baking powder, baking soda, cinnamon, and salt together. Set aside.

Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy - about 1 minute. Add both sugars and beat on high speed for 2 minutes until creamed together. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs and the vanilla. Beat on medium-high speed until combined, then beat in the mashed bananas. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk and mixing each addition just until incorporated. Do not overmix. The batter will be slightly thick and a few lumps is OK.

Spread batter into the prepared pan. Bake for 45-50 minutes. Baking times vary, so keep an eye on yours. The cake is done when a toothpick inserted in the center comes out clean. If you find the top of the cake is browning too quickly in the oven, loosely cover it with aluminum foil.

Remove the cake from the oven and set on a wire rack. Allow to cool completely. After about 45 minutes, I usually place it in the refrigerator to speed things up.

Make the frosting: In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy. Add 3 cups confectioners' sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. If you want the frosting a little thicker, add the extra 1/4 cup of confectioners' sugar (I add it). Spread the frosting on the cooled cake. Refrigerate for 30 minutes before serving. This helps sets the frosting and makes cutting easier.

Cover leftover cake tightly and store in the refrigerator for 5 days.

1 lb. pig ears

1 1/2 lb pork belly

1 piece onion minced

3 tablespoons soy sauce

1/4 teaspoon ground black pepper

1 knob ginger minced (optional)

3 tablespoons chili flakes

1/2 teaspoon garlic powder

1 piece lemon or 3 to 5 pieces calamansi

½ cup butter or margarine

¼ lb chicken liver

6 cups water

3 tablespoons mayonnaise

1/2 teaspoon salt

1 piece egg (optional)

INTRUCTIONS

Pour the water in a pan and bring to a boil Add salt and pepper.

Put-in the pig's ears and pork belly then simmer for 40 minutes to 1 hour (or until tender).

Remove the boiled ingredients from the pot then drain excess water

Grill the boiled pig ears and pork belly until done

Chop the pig ears and pork belly into fine pieces

In a wide pan, melt the butter or margarine. Add the onions. Cook until onions are soft.

Put-in the ginger and cook for 2 minutes

Add the chicken liver. Crush the chicken liver while cooking it in the pan.

Add the chopped pig ears and pork belly. Cook for 10 to 12 minutes

Put-in the soy sauce, garlic powder, and chili. Mix well

Add salt and pepper to taste

Put-in the mayonnaise and mix with the other ingredients

Transfer to a serving plate. Top with chopped green onions and raw egg.

Serve hot. Share and Enjoy (add the lemon or calamansi before eating)

The originally sisig is composed of chopped pigs face with snout and ears. Chicken liver, pig brain, and onion along with calamansi are also part of the mix.

 

There are several sisig versions available today. There is a variety of main ingredients. It ranges from the original pig's face to a healthier seafood concoction. Squid Sisig, Tuna Sisig, Bangus sisig, and Tahong Sisig are some examples.

How to Cook Sisig

This sisig recipe starts by boiling pork belly and pig ears until tender. These are then grilled for a few minutes until it browns and develops a good texture. I chop the meat into small pieces after grilling.

Start cooking the sisig by sautéing ginger. Add chicken liver. Cook it thoroughly. Note that ginger is an optional ingredient for this sisig version. I added it to reduce the gaminess of chicken liver. Feel free to use it based on your preference.

Add the minced meat. These are the pork belly and ears. Make sure to blend all the ingredients together. This will balance the flavor of the dish. Add the seasonings and spices afterwards.

You have the option to use a metal plate to serve the dish. This can also be served on a regular plate. I topped this version with egg. This is optional.

Siomai Love

Another delicious and heavenly taste food product that Comida Cravings is offering to hungry Filipinos is the Siomai. Siomai Love denoted as one of the favorite foods for many people. Shumay originated in China. Shumai is a type of traditional Chinese dumpling, originating from Hohhot. In Cantonese cuisine, it is usually served as a dim sum snack. In addition to accompanying the Chinese diaspora, a variation of Shaomai also appears in Japan and various southeast Asian countries.

Because of the popularity of Siomai, different variations have been introduced to Asian countries with different taste and appeal for many buying consumers. This is the reason why we have different version of Siomai such as Chicken Siomai, HongKong Siomai, Japanese and Shanghai Siomai. Each variation has different taste, but of equally delicious and nutritious. Some have different version such as fried Siomai or steamed cooked. Siomai is a popular dim sum dish which consists of ground pork or shrimp or both, carrots, dried mushrooms, green onions and flavored with soy sauce, Chinese wine, salt, pepper and sesame oil. Egg and cornstarch are used to bind the mixture together. It is then wrapped in wonton wrappers and steamed.

 

MAIN INGREDIENTS

1 lb lean ground pork

½ lb shrimp , peeled, deveined and finely chopped

3 large dried shitake mushrooms

¼ cup shredded carrots

¼ cup chopped green onions

1 teaspoon soy sauce

1 teaspoon Shaoxing wine or rice wine or sherry

1 teaspoon salt

1/8 teaspoon ground pepper

1 tablespoon sesame oil

1 egg , lightly beaten

1 tablespoon cornstarch

24 wonton wrappers

 

INSTRUCTIONS

Soak the mushrooms in hot water for 20 minutes. Drain, remove the stems and chop finely.

In a large bowl, thoroughly mix all the ingredients until well blended. Cover with plastic wrap and refrigerate for 20 minutes.

Fill center of wonton wrapper with a tablespoonful of the filling. Wrap the edges around the filling and flatten the top with the back of a spoon. Repeat with the rest of the wrappers and filling.

Lightly dust the bamboo steamer with flour (or brush stainless steamer with oil) and steam the siomai for 10-15 minutes.

Serve with lemon juice and soy sauce dipping sauce.

SIOPAO

Siopao, is the Philippine cuisine indigenized version of the Cantonese steamed bun called cha siu bao.In Chinese, it is called baozi. Siopao was introduced to the Philippines by Ma Mon Luk, a Cantonese immigrant, in 1918. Ma Mon Luk is located in Quezon City and it was the first and the oldest branch of the restaurant.

Steamed buns are part of the traditional street scene in the Philippines. Countless cookshops, food stalls and bakeries offer this delicious finger food. The sweetish yeast dumplings are at their best when they come fresh and fluffy out of the steamer. The Filipinos often treat themselves to a little bite from the bun on the spot, at their favorite stall, and have the rest packed for eating in the office or at home.

 

Philippine food is a culinary mix of European and Asian elements. Besides Spanish and Portuguese influences dating back to the colonial era, it is largely a Chinese-type food that dominates eating habits. Therefore, it is not surprising that the Filipinos acquired their enthusiasm for filled steamed buns from South Chinese immigrants: siopao is a Philippine adaptation of the Cantonese "char siu bao" dumpling.

One of the peculiarities of siopao is the recipe: whereas, in the north of China, the dough is prepared solely with yeast, the South Chinese and thus the Philippine variants contain both yeast and baking powder. It is the combination of these two raising agents that gives the dough its characteristic soft, tender texture. Another special feature is the sugar content: North Chinese steamed buns like chiang mian mantou and the filled variant baozi, which is especially popular in the south, are usually made without sugar. But the Filipinos like their bun sweeter and add around 15% sugar to the recipe - which is usual for mantou in the south of China, too.

Siopao is a Chinese word meaning "hot bun" which is our Filipino version of Char siu bao, a steamed bun from mainland China. They are both similar since they are white, sweet and it is cooked in a steamer in a pan.

As you know, the Chinese immigrant brought their culture and food to the Philippines, which now become predominant in our foods. Other Chinese influenced Filipino food recipes I made include beef siomai, pancit canton, chop suey, and many more others.

There are two types of popular Filipino Siopao- Asado and Bola-Bola. The Bun can be served either pork or chicken. In this recipe, I am posting my mother's Chicken Siopao Asado recipe which is a sweet savory braised shredded chicken.

INGREDIENTS

3 cup of white flour

? cup of brown sugar

½ tablespoon of baking powder

1.5 tablespoon of sugar

2 teaspoon of yeast

1 cup of water

¼ cup of water (For mixing with the yeast and sugar)

3 tablespoons of vegetable oil

Asado Fillings

500 gram of chicken breast

½ cup of chopped red onions

2 cloves of garlic

1 tablespoon of cornstarch

¾ cup of water (¼ cup of water to mix with cornstarch)

2 tablespoons of brown sugar

2 tablespoons of soy sauce

2 tablespoons of oyster sauce

Salt for taste

DIRECTIONS

o          Making Siopao Dough

o          In a small cup, mix 2 teaspoons of yeast, ? cup of water, and 1 tablespoon of brown sugar. Set aside.

 

o          In a large bowl, combine the white flour, baking powder, water-yeast mixture, and the rest of the dough ingredient. Stir using the wooden spoon and then knead using your hand.

 

o          Add vegetable oil and continue kneading until the dough become soft and fluffy.

 

o          Add more flour if the dough is too sticky or more water if the dough is too rubbery

o          Cover the dough with a towel and leave it for 1 ½ hour to let the dough grow.
